My Baking Checklist (Most Recent on Top of List)

I recently moved to a new country where baking is a normal home activity. I tried it for several times now, and I enjoy every bit of it. So before I lose track of what I've done and how they turned out, I want to create a short narrative of how each of my experiments went. Hopefully I'll be able to see how I progress in this new hobby of mine. :)

March 10, 2018: Sticky Toffee Pudding

Made this as welcome dessert for my friend, Kim. Inspired by the Sticky Toffee Pudding dessert I had in Makars Gourmet Mash. My creation turned out great, though the sauce I made is not as thick as I was expecting. Oops, forgot to take a photo :D

A little bit on the dry side, but can definitely taste the walnut.

September 3, 2017: Moist Date and Walnut Cake

More like Moist Raisin and Walnut cake. Too much raisins, I would say. So next time I do this, I'll just make half the batch with less raisins and sultanas and more walnut!

But the cake turned out great and Le Husband loves it.

August 13, 2017: Banana Pudding Cheesecake

A simpler version of banana custard cheesecake; I am trying to learn how bananas react with cheesecake and if the combination is a hit or a miss. We immediately tried a slice (even though it is still not fully set), and I think we will enjoy a slice a night after dinner. :D

August 6, 2017: Fork Biscuits

This is called 'fork biscuits' because a fork is the only thing you need to decorate your easy-to-bake crunchy biscuits. Perfect pair to a warm cup of tea!

July 9, 2017: Moist Carrot Cake

The first carrot cake I've made is to soggy because I used olive oil instead of plain simple vegetable oil. With this great recipe as guide, I was able to make a much better version of incredibly moist carrot cake!

June 24, 2017: Banoffee Pie

We both enjoyed this one--the sweetness of the caramel, creaminess of the frosting, tartness of the banana, and yumminess of the chocolate all blend together.

May 20: Chocolate Crinkles

We did not enjoy my first try as it was so heavy on flour. Will try again next time, hopefully it'll turn out soft, chewy, and irresistible.

May 6, 2017: Yema Cake

Oh, this tastes like a heavenly leche flan and both of us loved it. The cheese on top is a MUST as it balances out the sweetness of the icing. Yummy!

April 1, 2017: Chocolate Cake

This I made for my husband's 30th birthday. It was a good bake but turned out to be too sweet especially for me since I am NOT a fan of chocolate (I can just eat the dark ones, >60% cacao content). I personally have this rule that I won't bake another creation unless we finish what I just made, and this one is a tough cake to break. I think we had this for almost three weeks!

February 14, 2017: Oreo Cheesecake

This is for the celebration of our first Valentine's day as husband and wife. Easy to make, but requires electric mixer to achieve best consistency of the cream cheese mixture. Thanks husband for my mixer! :)

February 4, 2017: Oatmeal Cookies

I noticed that the husband was not interested in finishing his can of oatmeal so it's time to make some oatmeal cookies! They turned out not as chewy as I hoped they would be, but keeping them in an airtight container helped in retaining the little moist they have in them.

January 14, 2017: Chocolate and Biscoff-filled Puff Pastries

In the desire to have a quick snack, I purchased a ready-to-bake puff pastry block and filled it with a teaspoonful of Reese's or Biscoff spread. I Googled how to roll a decent crescent pasty, but I still need practice :D. Turned out to be filling and tasty.
No recipe as this is almost from the counter. I just had to use my rolling pin, put in some spread, and roll it to whichever shape I want it to be.
